Tasting Notes:

Nose: Fresh lemon zest, green apple and a gentle sea breeze at first, followed by vanilla cream, honeycomb and soft brioche. Notes of pear, white flowers and a light thread of earthy coastal smoke develop with time.

Palate: Silky and bright. Sweet malt and citrus oils lead into flavours of poached pear, apricot and light pastry. Subtle oak spice, sea-salt minerality and a touch of pepper sit alongside a measured hint of peat smoke, reflecting the influence of the Paul Launois barriques.

Finish: Medium-long and refreshing, with lingering lemon curd, vanilla, toasted nuts and softly glowing ember smoke, tapering into a clean, gently saline afterglow.
