Distilled in 2011 and bottled in 2021 as the 4th Edition of the Founders Cask series, this limited single cask release from Kilchoman showcases the distillery’s signature marriage of Islay peat smoke and rich sherry maturation. Fully aged for 10 years in oloroso sherry hogsheads, the whisky delivers a bold yet beautifully balanced profile, combining Kilchoman’s coastal character with deep layers of fruit, spice and oak. Bottled at natural cask strength, 54.4%, and presented non chill-filtered with natural colour, this is a vibrant and expressive Islay single malt.

Tasting Notes:

Nose: Intensely aromatic with rich oloroso sherry influence. Notes of dried raisins, fig syrup and Christmas cake intertwine with warm baking spices, cocoa and smouldering peat embers. Hints of orange oil, sea spray and toasted oak add depth and complexity.

Palate: Full-bodied, vibrant and richly layered. Dark fruits, stewed plums and spiced fruit loaf lead the way, supported by treacle, charred oak and a gentle nuttiness. Kilchoman’s signature citrus brightness emerges beneath the sherry richness, all wrapped in rounded, earthy peat smoke that evolves beautifully with time in the glass.

Finish: Long, warming and wonderfully expressive. Waves of sweet malt, salted caramel, maritime sea salt and gentle peat smoke linger, complemented by lingering notes of dried fruit, roasted nuts and warm spice.

About the Distillery:

Founded in 2005, Kilchoman Distillery is a family-owned farm distillery located on the rugged west coast of Islay. As one of Scotland’s few true farm-to-bottle producers, Kilchoman grows and malts a portion of its own barley on-site, maintaining complete control over each stage of production. The distillery combines traditional methods with a hands-on, small-scale approach, resulting in whiskies that embody both Islay’s coastal character and Kilchoman’s distinctive house style. Known for its peat-rich spirit, long fermentations and emphasis on high-quality cask maturation — particularly sherry and bourbon barrels — Kilchoman continues to champion craftsmanship, authenticity and a deep connection to the land from which its whisky is born.
