A particularly special release for us, this Highland Whisky Shop exclusive single cask was personally selected from the warehouses of GlenAllachie Distillery. Distilled on 14th August 2012 and bottled in July 2026 after almost 14 years of maturation in an Oloroso Sherry hogshead, Cask #687 was chosen for its wonderfully rich balance of dark fruit, chocolate, coffee and warming spice. Bottled at its natural 58.3% cask strength, with no added colour and without chill-filtration, only 348 bottles were produced. Exclusively bottled for Highland Whisky Shop Inverness, this is a genuinely unique GlenAllachie and a very special addition to our collection.

Tasting Notes:

Nose: Mocha, cinnamon and crystallised ginger, with brandied orchard fruits, cherry buttercream and muscovado sugar.

Palate: Chocolate, red berries and mocha, followed by apricots, heather honey and butterscotch, with ginger and black cherries.

About the Distillery:

GlenAllachie Distillery is one of Scotland's few independently owned and managed distilleries, led by renowned Master Distiller Billy Walker, whose career in the Scotch whisky industry spans more than five decades. Located in the heart of Speyside at the foot of Ben Rinnes, GlenAllachie was acquired by Walker and his business partners in 2017 along with extensive stocks of maturing whisky.

Under independent ownership, production has been deliberately reduced to allow a greater focus on spirit quality, including exceptionally long fermentation times of up to 160 hours. Particular emphasis is placed on wood management, with an extensive range of carefully sourced casks used to shape the distillery's distinctive single malts. Additional traditional dunnage warehousing has also been introduced on site, giving the team greater control over maturation and allowing exceptional individual casks such as Cask #687 to be selected and bottled at their peak.
